Is it possible to add using UE points versatility to a player. For example a midfield player being able to play in defence?

It does and it's fairly rare. Personally I believe it's also incredibly underrated. Albrighton has it in 118 for me and is one of my best performers.

It would make sense though for a manager to be able to play a defender in midfield or vice versa if he had the right stats.
Maybe there could be a training to try and change a players position.
